Hi, on this product page the Image shows metal clamps but these clamps are actually plastic.

do they use an end cap, at the end of the ridge tiles?

This system is just for fitting the ridges and does not include an end cap, at the end you would use a stop end ridge, or if using a dry verge system they often have ridge end caps that will cover the final ridge.
